Apple-Cinnamon Steel Cut Oats

Serves 4


  • 1 cup steel cut oats 

  • a pinch of kosher salt

  • 1 tsp vanilla extract

  • 1 apple, any color

  • 1 tsp sugar (brown or white)

  • 2 tsp cinnamon


  1. Bring 2 ½ cups water to a boil. Stir in oats, salt, and vanilla. Bring back to a boil, then turn down to a low simmer. Cover and cook, stirring occasionally, until oats are cooked to desired doneness, about 20 minutes. 

  2. Mix sugar and cinnamon in a small mixing bowl. Cut the apple into small dice (about ¼ inch cubes) and add to sugar-cinnamon mixture. Stir to combine well.

  3. Divide warm oats into individual serving bowls. Top with 1-2 tablespoons of cinnamon-apple. 

  4. Serve immediately or pack and bring to work for later.
