Almond Blueberry Waffles


This is such a great alternative to frozen waffles. They are full of great ingredients and absolutely delicious!

Almond Blueberry Waffles

Time to cook 30 minutes, makes 6 servings // Equipment: waffle iron


  • 1 cup thick rolled oats
  • 1 cup almonds (to make 1 ½ cups of oat / almond blend)
  • 1 1/2 cups all-purpose flour
  • 3 tsp. baking powder
  • 1 tsp. baking soda
  • 1 3/4 cup buttermilk
  • 2 eggs
  • 1/4 cup melted butter, cooled
  • 1 tsp. vanilla extract
  • 1 pint fresh blueberries


  1. Preheat waffle iron.
  2. In a VItamix blender or food processor, blend the oats and the almonds together until they are the consistency of a coarse flour. This should yield about 1 ½ cups of almond / oat blend.
  3. Sift together dry ingredients – set aside.
  4. Whisk wet ingredients together. Slowly stir in the dry ingredients and stir until just blended. The mixture may be lumpy.
  5. Ladel the batter into the waffle iron and sprinkle with blueberries. Cook until browned on both sides.


  • Maple syrup is optional — these waffles are great straight-up!
