Best Egg Sandwich

Not much I love more than starting the day with an egg sandwich! If I am in a rush, I keep it simple. A scrambled egg or two on a toasted whole grain English muffin. Wrap in foil and go! But when I have time, this sandwich makes my day.

 

Best Egg Sandwich

Time to cook 4 minutes, makes 1 serving

Ingredients

  • 1-2 eggs

  • 1 whole grain English muffin

  • 1/2 teaspoon olive oil

  • 2-3 slices ripe avocado

  • 2 slices ripe tomato

  • a handful of fresh baby spinach

  • a splash of hot sauce

Instructions

  1. Put the muffin in a toaster.

  2. As it is cooking, heat a small non-stick skillet over medium heat. Add the dash of olive oil. When warm, crack the egg into the pan.

  3. Plate the toasted English muffin. Slide the egg on top when it is cook to your desired yolk doneness. Top with spinach, tomato, avocado, and hot sauce if you like it spicy.

  4. Put your feet up and enjoy!
